
Have you ever been stuck for lunch box snack for your childs lunch box that is allergy friendly , here is a recipe that we use all the time and can add whatever you like to it and change the flavour. Decided to share an awesome and well used recipe that my kids are never sick of , neither am I.
There isn’t a week in our house that we don’t cook a batch or two of these muffins for my boys to snack on or for their lunch boxes. The greatest thing is how flexible this recipe can be depending on the families needs or occasion in which its needed.
Great for taking to schools for birthday parties or for taking with you to parties your child or yourself have been invited to.Just because our children or we may have allergies doesn’t mean you have to miss out on going to the party , just have to be more organised and have a party pack for your child to take to the party filled with all allergy friendly party food .When I say flexible I mean can have it with or without what you need it to and instead of having a recipe that you have to take things away from in order to make it suitable for you this one you add what you are allowed.
You can use what flour you are able to use in your diet , can add the sugar ( sweetener) you wish to , and use what milk you are able to or even water in replace of the milk.Same goes for the nuttlex , we use this as is dairy free , you can use pure butter or even rice bran oil if you wish too. Oh if you are able to have egg you can choose to add 1 egg , we can’t due to our youngest son is anaphylactic to them and they turn out just fine.
Then add the flavour you would like :
Fast Allergy Friendly Muffin Recipe
1 1/2 Cups Flour of choice ( we use ORGRAN Self raising flour)
1 1/2 Cups Sugar or for Savory 1/4 tsp Salt
2/3 Cup Rice Milk (milk of choice or water)
1/4 Cup Nuttlex (butter or oil of choice)
1 tsp Vanilla Extract
1/2 Cup ( Flavour of choice pears , strawberries , banana) or 1/4 Cup ( Choc chips , Carob , Cocoa )
Method
Pre heat oven at 180C
Measure all ingredients and place in mixing bowl.
Mix to combine all ingredients together including the sweet or savory flavour of choice
Pour into greased muffin tin or use silicon muffin cups
Then place in the oven for round 15 – 20 mins keeping eye on them.
And that is it , that’s all there is to it.

Savory – keep in mind to replace sugar/sweetener and the vanilla extract with 1/4 tsp salt
cheese & Bacon
Ham Cheese & Shallots
Oh there are so many options obviously if you have a Dairy issue or severe allergy you don’t add the cheese as well keep in mind that some shaved Ham / Bacon can have preservatives that are dairy derived ( oh and we learnt this one the hard way when youngest was Dairy anaphylaxis) Just ask the deli if you can read labels and most will certainly let you read it for yourself.
You can experiment with these if doing jam ones can half fill tins then add jam and then fill on top. Just keep in mind if you are having sweet ones it’s the sweetener or sugar of choice , if savory take out the vanilla extract and the sugar then replace with the salt.
